pearl balls


1 cup (185g) glutinous rice..
(soaked in cold water 1 hour)
500g chicken breasts..(cut into slices)
2 tablespoon soy sauce..
1 egg..(beaten)
1 tablespoon cornflour..
1 spring onion..(finely chopped)
1/2 teaspoon sugar..
1/2 teaspoon white pepper..
salt to taste..

drain rice...combine chicken with remaining ingredients..
form into 20 balls with wet hands..roll each ball in rice until well coated...
arrange on two heatproof plates..
leave 1.5cm space between each ball for rice expansion...
stream covered in a double boiler over high heat for 1 hoour..
serve with prepared mustard..soy sauce & chilli dip..
